4月5月と山菜がおいしい季節です。今年も筍やわらびをいただきました。
ちなみに、わらびは宮島で採れたものです。
山菜は独特の風味がなんともいえませんが、一度になかなか食べ切れません。
でもなぜか、もらう量は多かったりします(^-^) 今までは、家族に「また～？」と言われても、
使い切るまで連日食卓に上がっていました。
今年は、あらかじめ食べきれない事を想定し、保存食に挑戦しました。
筍は水煮と塩漬けに・・・わらびはラッキョウ酢に漬けてみました。
ちょっと山菜が遠ざかり、恋しくなった頃食べたいと思います。
なかなか好んでまで食べない食材だと思いますが、季節に一度は口に入れたいものです。
食育もまず経験する事からだと思い、子供達には色々な食材を口に入れるようにしています。
すぐ、食べる用のわらびはアク抜き後めんつゆにつけてみました。
1週間は十分日持ちするし、歯ごたえもよく、マヨネーズであえてサラダも変身！！
万能常備菜となり、忙しい日には大活躍でした。
