ここのところ、公私共に忙しい日々を送っています。
12月はまだまだキツイ日々ですが・・・。はあ～～～考えるだけで憂鬱です。
ポジティブに頑張らねば・・・と久々に趣味の燻製作りをしました。
・・・といっても、下味をつけるだけ、燻すだけなので仕事の合間にできるのです。
そして、夕食の一品ができるのでとっても楽チン！！
でも、毎回出来ばえが違い難しいです。
今回は初のラム肉で挑戦しました。
下味ソミュール液に1日漬け込、液から上げて数時間乾燥し、燻しました。
ラムはクセがあるから、どんな味付けにしようかかなり迷いました。
結局、オリジナルでクレイジーソルト・ケチャップ・100%りんごジュースに漬け込みました。
結果は、ケチャップの酢成分とりんごジュースでラム肉がやわらかく大成功でした。
ワインにピッタリ！！。。。。おいしかった(^-^)V
おまけにハムも燻しましたが、燻し時間が長すぎて硬かった。
気分転換できたので、また頑張ろう！！

昨日今日と東京に行っていました。ゆうこちゃんも、燻製を作れるんだ。(^^♪
宮島には２５日に予定どおりお邪魔しましたよ。今年２回目の宮島入りですから、今回は案内役でした。紅葉谷公園にも行きましたが、紅葉は終盤のようでした。弥山の秋の風景を楽しんで帰りました。五重塔の横のイチョウの紅葉がきれいでした。大願寺のイチョウの樹も、ちゃんとカメラに収めました。
いま、私のデスクには、土産物店で購入した、かわいいバンビ君が鎮座しています。ついつい目が合ってしまって衝動買いです。
康雅君、美男子ですか。良かったですね。お鼻が中澤家？？？きっと良いことがありますよ。(^^♪
